Situated at an altitude of 2,000 metres, it offers a unique setting in the 3 Vallées, combining scenic beauty with a wealth of biodiversity. Come and discover our garden this summer for a colorful and fragrant journey!
The vegetable garden: a showcase of flavours
Our vegetable garden is at the heart of our culinary activity. Every plant and vegetable is carefully cultivated, reflecting our passion for environmentally-friendly agriculture. Various permaculture techniques, such as aromatic spirals and mounds, allow us to optimize space while promoting biodiversity. Here, vegetables aren’t just grown; they’re celebrated. Visitors can admire the diversity of crops, from juicy tomatoes to crisp zucchinis, all ready to be harvested for our dishes. And let’s not forget our various aromatic herbs, with which we’ve created our own homemade infusions that are on sale in the store and restaurant.
The flower garden: an explosion of color
Alongside our vegetable gardens, our flower garden awakens the senses with its edible flowers and aromatic herbs. These natural beauties don’t just beautify the garden; they also find their way onto our restaurant plates. Edible flowers, for example, add a touch of color and flavor to our dishes, while offering an exceptional visual experience. Our garden is an invitation to contemplation, where each flower tells a story of life and passion.
Permaculture: a philosophy of life
Permaculture is at the heart of our approach. This principle of sustainable cultivation creates a balanced ecosystem in which each element plays an essential role. In our garden, we use techniques that respect natural cycles, promoting a living, productive soil. Thanks to this approach, we can grow vegetables and herbs in an eco-responsible way, while preserving the precious resources of our alpine environment. From the earth to the plate: committed organic local cuisine
One of the special features of our garden is that everything grown there is used in the restaurant. Fresh, seasonal produce enriches our menus, offering guests an authentic, locavore culinary experience. Every dish is prepared with ingredients harvested the same day, guaranteeing incomparable quality and flavor. In addition, flowers and herbs from the garden are often used to decorate the plates, creating a perfect harmony between taste and aesthetics.
Guided tours of the garden: an immersion in permaculture
Our garden can be visited, with or without a guide, all summer long. You can book a guided tour in July and August (adults only), accompanied by our gardener Joseph. You’ll plunge into the fascinating history of our permaculture garden and discover an agriculture that respects nature and people. Joseph will share with you the principles and techniques for preserving the earth and promoting biodiversity. Book a guided tour of the garden
